In our store, we have four full tables. I never considered the possibility that when the new season hits that the tables might want to just keep going with Tyranny. I have been on a mission to finish Rise of Tiamat by March 11, so my table will be fine. But the others are still in around episode 4 of Hoard.

We have kept our eyes peeled for new players, and the plan is for me to run them from level one on a separate day. I think your idea of having a "floater" DM ready to run a level one adventure (like Defiance in Phlan) is the best solution.

Overall we've had much more player retention than in 4e encounters. 4e dropped off pretty quick within a few months, while 5e is actually still growing. It's pretty amazing.
